An easy and tasty balsamic chicken and veggies recipe for the 21 Day Fix Diet
  • 1¼ pound chicken
  • ½ onion chopped
  • 8 ounces mushrooms
  • 14/ cup cherry tomatoes
  • 12 ounces green beans
  • ¼ cup Italian dressing
  • 2 Tablespoons honey
  • 3 Tablespoons balsamic vinegar
  • Salt and Pepper to taste
  • 2 Tablespoons olive oil
  1. Brown mushrooms and onion in oil
  2. Add green beans and cook until beginning to soften
  3. Remove vegetable from pan
  4. Salt and pepper chicken and brown on each side, cooking thoroughly
  5. Remove chicken from pan
  6. Add Italian dressing, honey, and balsamic vinegar to pan and stir
  7. Add back in vegetables and chicken, stirring to coat
  8. Simmer until heated through and beans are done
  9. Stir in tomatoes, heat through, and serve
